Smash Burger Recipe: Crispy Smash Burgers with Blackstone Rub

Ingredients
- 1 lb ground beef
- 1 to 2 tbsp Blackstone Rub
- 1 tbsp water
- 1/4 tsp baking soda
- American cheese
- Burger buns
- Your favorite burger toppings
- Optional: garlic or onion
Instructions
1. Prepare the Beef
Gently mix the ground beef with Blackstone Rub, 1 tablespoon of water, and 1/4 teaspoon of baking soda.
Add garlic, onion, or any other seasonings you like.
Avoid overworking the beef. Mix only until everything is evenly incorporated.
Let it sit 5-15 minutes for baking soda to take full effect.
2. Form the Burger Balls
Divide the beef into roughly 1/8-pound portions and loosely roll each portion into a ball.
Don't press them into patties yet. The smashing happens on the cooking surface.
3. Get It Hot
Heat a griddle or cast-iron pan over high heat.
You want the cooking surface very hot before the beef goes down so you can develop that crispy crust.
Add a high smoke point oil like algae oil, or just make bacon in the pan first and sear the burger patties in bacon fat.
4. Sear, Flip, and Smash
Place each beef ball onto the hot cooking surface and let it sear for about 30 seconds.
Flip the ball over, then immediately smash it into a thin patty.
Cook for 15 to 20 seconds, flip again, then cook the other side for another 15 to 20 seconds, or longer as needed to reach your desired doneness.
5. Add the Cheese
Place cheese over the burger and cover it briefly with a lid.
The trapped steam will help melt the cheese quickly.
6. Build Your Burger
Transfer the finished patties to your buns, add your favorite toppings, and serve immediately.
